The after dinner or late night finale¦PUMPKIN SPICE HOT WHITE CHOCOLATE

This hot white chocolate is in the style of European drinking chocolate, which is made with whole milk (and sometimes part cream) and melted high quality bar chocolate. The amount of white chocolate is variable.

Ingredients:

  • 3 cups whole milk
  • 1 cup canned pumpkin puree
  • 2 cinnamon sticks, broken
  • 12 whole cloves, crushed slightly
  • 12 whole allspice berries, crushed slightly
  • 2 tablespoons chopped candied ginger
  • 2 tablespoons chopped orange peel (all pith removed)
  • 1 vanilla bean, split lengthwise
  • 4-6 ounces, high quality white chocolate, roughly chopped
  • Pinch sea salt. Don't even think about leaving this out!

Garnish: 1 cup heavy cream, whipped and lightly sweetened* shaved white chocolate, from a bar of white chocolate*ground cinnamon in a shaker.

Preparation: In a saucepan, over medium-low heat, bring the milk to a bare simmer. Lower the heat to keep the milk below the boiling point and add the pumpkin, cinnamon, cloves, allspice, candied ginger and vanilla bean. Remove from the heat and let cool as long as you can wait (refrigerate if you need to hold longer than an hour). When ready to serve, pour the milk mixture through a triple mesh strainer into a clean saucepan. Heat to just below a simmer and remove from the heat. Add the white chocolate and stir until the chocolate is melted. Remove from the heat, and add sea salt. Just before serving, top each glass of hot chocolate with a generous mound of whipped cream, a few shavings of white chocolate, and a sprinkle of cinnamon. Serve immediately.  Makes five, 6-ounce servings.

The classic¦HOT TODDY

Hot Toddy is the classic hot drink. Feel free to experiment with your favorite types of tea, or skip it all together and use hot water alone. Most black and green teas mix well with the sweetness of the honey and lemon, but it's a personal preference. BUNN's My Cafe© makes coffee and tea in less than a minute.  Plus, the My Cafe© has a pulse brew option which allows you to adjust the tea strength.

Ingredients:

  • 1 oz brandy, whiskey or rum
  • 1 Tbsp honey
  • 1/4 lemon
  • 1 cup hot water
  • 1 tea bag

Preparation: Coat the bottom of a mug or an Irish coffee glass  with honey. Add the liquor and the juice of the lemon. Next, make a cup of your favorite tea with the My Cafe®. Pour the steaming tea into the glass and stir.

Hot minty, chocolate delight¦A MIDNIGHT SNOWSTORM

This recipe for a Midnight Snowstorm is very similar to a Hot Peppermint Patty, using creme de menthe in place of the harsher peppermint schnapps. This substitution leaves the minty, chocolate flavor, but does so in a very smooth, creamy way. Use white creme de menthe inside the drink and add green creme de menthe on top of the whipped cream for a little color.

Ingredients:

  • 2 oz white creme de menthe
  • hot chocolate
  • 1/2 oz green creme de menthe
  • whipped cream

Preparation:. Use the BUNN My Cafe to dispense hot water to create your hot chocolate.  Pour the white creme de menthe and hot chocolate into an Irish coffee glass. Top with whipped cream. Drizzle the green creme de menthe on top.
